摘  要:针对海参加工复杂、利用程度低、即食海参保存期短、产品单一等瓶颈问题,系统进行了光参加工方面关键技术转化,结合国内热门的饮料市场,以满足消费者健康为创新核心,开发生产一款天然健康、具有较大市场前景的海参果汁饮品,进行了年产10000 t海参果汁饮料工厂初步设计。经过综合考虑各项条件,针对10000 t海参果汁饮料项目的需要,对厂区规划、车间布局、产品方案及工艺流程、物料衡算、设备选型、卫生规范、企业组织、人员定编等进行设计。为了增强项目可行性,对海参果汁饮料的各项工艺流程进行详细的分析与计划,并对该方案进行了技术经济分析。研究表明,该项目固定资产投资3121.64万元,年利润8097.87万元,投资回收期3年。This article in view of the sea cucumber processing complex,low utilization degree,ready-to-eat sea cucumber short shelf life,the product of a single bottleneck problem,key technology transformation system was carried out in light,combined with domestic hot drinks market,in order to satisfy consumers'health core for innovation,development and production of a natural health has great market prospect of sea cucumber juice drinks,a preliminary design of a sea cucumber juice beverage factory with an annual output of 10000 tons was carried out.After comprehensive consideration of various conditions,according to the needs of 10000 tons of sea cucumber juice beverage project,the plant planning,workshop layout,product scheme and process flow,material balance,equipment selection,hygiene standards,enterprise organization,personnel selection and so on were designed.In order to enhance the feasibility of the project,a detailed analysis and plan are made on the various technological processes of sea cucumber juice drinks,and a technical and economic analysis was carried out on the scheme.The study showed that the fixed asset investment of the project was RMB 31216400 yuan,the annual profit was RMB 80978700 yuan,and the investment payback period was 3 years.
