摘 要:采用微波辅助水浸提法提取荸荠皮中的色素,通过单因素试验来确定料液比、微波功率、加热时间对提取液吸光度值的影响;以提取液的吸光度作为反映效果,综合应用单因素试验与响应面法建立回归模型进行荸荠皮色素的提取工艺优化.最终确定最佳提取工艺条件为:料液比1∶9 g/mL、微波功率200 W、加热时间4 min,通过此条件处理的提取液吸光度值为0.930.根据回归模型优化结果可得,各因素对色素提取效果的影响程度为:微波功率(B)>加热时间(C)>料液比(A).The microwave-assisted water extraction method was used to extract pigments from Eleocharis tuberosa peel.Single factor test was used to determine the effect of material-to-liquid ratio,microwave power and heating time on the absorbance value of the extract;the absorbance of the extract is used as the response value,combined with single factor test and response surface method to establish a regression model to optimize the extraction process.The optimal extraction process conditions were finally determined as follows:the material-to-liquid ratio was 1∶9 g/mL,the microwave power was 200 W,the heating time was 4 minutes,and the absorbance value of the extract processed under these conditions was 0.930.According to the optimization results of the regression model,the degree of influence of each factor on the extraction rate of pigment can be listed as follows:Microwave power(B)>Heating time(C)>Material-to-liquid ratio(A).
