摘 要:以铁观音鲜叶为原料,研究燃气式滚筒杀青机的投叶量与转速对铁观音毛茶品质成分影响。结果表明,滚筒杀青机每筒投叶3 kg转速16 r/min时成茶的含水率最低;当转速为16 r/min时,每筒投叶3 kg和5 kg所制茶叶的水浸出物含量无明显差异;随着转速的提高,每筒投叶5 kg处理的茶多酚总量较投叶3 kg处理显著减少;每筒投叶量3 kg和转速28 r/min交互作用对游离氨基酸总量影响最大;同时,以上2种不同投叶量与不同转速的交互作用对咖啡碱含量均无显著差异,但是每筒投叶3 kg比5 kg对咖啡碱含量影响略大。因此,杀青时选择适当的投叶量和转速参数指标,对安溪铁观音的生化品质具有关键作用。With the fresh leaves of Oolong tea variety Tieguanyin in Southern Fujian as raw material,a gas-turbine rotary fixation machine was used to investigate the effects of different technological combinations of different speeds and leaf amount on the biochemical composition of tea leaves.The results showed that the tea leaf dosage were 3 kg per tube under the rotation rate of 16 r/min,the content of water extract had no significant influence.At 5 kg per tube of tea leaves,the total amount of tea polyphenols decreased significantly compared with that of 3 kg per tube.The interaction between 3 kg per tube tea leaf dosage and rotation speed of 28 r/min had the highest influence on the amount of free amino acids.At the same time,the interaction between two different tea dosages and different rotation speeds had no significant effect on the caffeine content but the effect of 3 kg per tube tea dosages on caffeine content was slightly higher than that of 5 kg per tube tea dosages.Therefore,the selection of appropriate parameters in the process of fixation plays a key role in the biochemical quality of Anxi Tieguanyin.
