摘 要:甲壳素是一种天然多糖,广泛存在于地球的水陆生态系统中,在自然界中的含量仅次于纤维素,其水解产物N-乙酰氨基葡萄糖(GlcNAc)、壳寡糖在功能食品及生物医药领域已得到广泛应用。甲壳素酶是一种能够专一水解甲壳素的酶,在温和条件下可以将甲壳素水解为壳寡糖和N-乙酰氨基葡萄糖。甲壳素酶在自然界中分布广泛,在细菌、真菌中均有发现,具有重要的生态意义,且在生物方面应用广阔。本文从分类和来源、发酵生产优化以及应用领域等方面对甲壳素酶进行了综述,展望了甲壳素酶的开发与应用,以期为甲壳素酶的进一步研究提供参考。Chitin is a natural polysaccharide that is widely found in the earth’s aquatic and terrestrial ecosystems and is second only to cellulose in nature.Its hydrolysis products N-acetylglucosaminoglucose(GlcNAc)and chitooligosaccharide have been widely used in functional food and biomedical fields.Chitinase is an enzyme that can specifically hydrolyze chitin and hydrolyze chitin into chitooligosaccharides and N-acetylglucosaminoglucose under mild conditions.Chitinase is widely distributed in nature,found in bacteria and fungi,and has ecological importance and wide application in biotechnology.In this paper,the current status of basic research and application of chitinases was reviewed.The source and classification,fermentation production optimization and applications of microbial chitinase were summarized,and provided an outlook on the subsequent development an application of microbial chitinase with a view to improving the reference for further research utilization of chitinase.
