摘 要:为提高水代法小磨香油工艺机械化水平及生产效率,选取9种不同类型搅拌桨,筛选出油率较高的搅拌桨类型。在单因素试验基础上,设计正交试验对液料比、快速搅拌混合时间、慢速搅拌出油时间、水浴温度进行优化,利用离心机对制取毛油进行处理,并检测小磨香油品质。结果表明:采用径流式二叶桨式搅拌桨、液料比0.85∶1 (m L/g)、水浴温度80℃、快速搅拌混合时间40 min、慢速搅拌出油时间60 min时,出油率为51.98%。在11 000 r/min离心15 min的条件下,得到的香油品质符合一级油质量标准。In order to improve the mechanization level and production efficiency of sesame oil process by water substitution method,9 different agitators were selected,and the agitators with higher oil yield was selected. On the basis of single factor test,orthogonal test was designed to optimize the liquid-material ratio,rapid mixing time,slow mixing oil output time and water bath temperature. The crude oil was treated by centrifuge,and the quality of sesame oil was detected. The results showed that the oil yield was51. 98% when the radiol-flow two blade paddle agitator was used,the liquid-material ratio was 0. 85 ∶ 1( m L/g),the water bath temperature was 80 ℃,the rapid mixing time was 40 min,and the slow mixing oil output time was 60 min. Under the condition of centrifugation at 11 000 r/min for 15 min,the quality of the sesame oil met the first-class oil quality standard.
