摘 要:目的了解2016—2020年江西省市售食品中单增李斯特菌的污染及耐药情况。方法采集全省选定的24个市县的超市、百货商场等市场流通环节销售的熟肉制品样品(包括酱卤肉、熏烧烤肉等),参照国家标准GB 4789.30-2016提供的方法检测和分离单增李斯特菌,采用生化和质谱方法鉴定菌株,使用微量肉汤稀释法对分离的阳性菌株进行耐药性检测。结果五年共采集1 128份样品,共分离单增李斯特菌32株,总检出率为2.84%,五年污染率分别为1.85%,4.59%,3.27%,3.18%,1.87%。不同地区、不同流通环节采集的样品阳性检出率均存在统计学差异。药敏结果显示分离的32株菌均对头孢西丁耐药(100%),耐3种以上的多重耐药菌有22株。结论江西省市售熟肉制品中单增李斯特菌存在一定的污染率,有一定的安全隐患,且耐药情况日趋严重,相关监管部门应加强重视,预防食源性疾病的发生。Objective To investigate the contamination and drug resistance of Listeria monocytogenes levels from bulk cooked meats in Jiangxi Province from 2016 to 2020.Methods Samples of cooked meat products(including marinated meat in sauce,smoked and roasted meat,etc.) sold in supermarkets,department stores and other market circulation in 24 selected cities and counties in the province were collected,and Listeria monocytogenes was detected and isolated with reference to the methods provided by the national standard GB4789.30-2016.The strains were identified by biochemical and mass spectrometry methods,and drug resistance testing was performed on the isolated positive strains using the micro-broth dilution method.Results A total of 1 128 samples were collected during five years,and 32 Listeria monocytogenes strains were isolated,with an overall detection rate of 2.84% and contamination rates in five years of 1.85%,4.59%,3.27%,3.18%,and 1.87%,respectively.There were statistical differences in the positive detection rates of samples collected from different regions and different distribution stages.The drug sensitivity results showed that all 32 isolated strains were resistant to cefoxitin(100%),and there were 22 strains of multi-drug resistant bacteria resistant to more than three species.Conclusion The contamination of Listeria monocytogenes levels in bulk cooked meats carries safety hazard,with exacerbating drug resistance.The supervision should be enhanced to prevent foodborne diseases.
