摘  要:以隆两优534(LLY)、晶两优1212(JLY)、浓香32(NX32)、玉针香(YZX)4种籼稻为原料,研究加速陈化期间籼稻内源性脂肪酶与抗氧化酶对发芽率、粗脂肪含量、脂肪酸值、过氧化值和丙二醛值含量的影响。结果显示:随着陈化时间的延长,4种籼稻的发芽率、抗氧化酶活性和粗脂肪含量均呈现总体下降趋势,其中LLY的粗脂肪含量和JLY的过氧化物酶活性在陈化结束时略微上升。丙二醛含量、脂肪酶活性和脂肪酸值则总体呈现出先上升后下降的趋势,但JLY和NX32在陈化结束时丙二醛含量略微上升,JLY在陈化结束时脂肪酶活性同样略微上升。在以42℃加速陈化30 d时,LLY的发芽率最高,脂肪酸值和过氧化值最低,抗氧化酶活性变化幅度相对较小。在加速陈化过程中籼稻的发芽率与超氧化物歧化酶(superoxide dismutase,SOD)、过氧化氢酶(catalase,CAT)、抗坏血酸过氧化物酶(ascorbate peroxidase,APX)、脂肪酶活性均有着显著相关性,脂肪酸值与SOD、CAT、脂肪酶活性存在显著相关性,过氧化值与APX、脂肪酶活性存在着显著相关性。The effects of endogenous lipase and antioxidant enzyme on germination percentage,crude fat content,fatty acid value,peroxide value and malondialdehyde content of indica rice during accelerated aging were studied using Longliangyou 534(LLY),Jingliangyou 1212(JLY),Luxiang 32(NX32)and Yuzhuixiang(YZX)as raw materials.The results showed that the germination rate,antioxidant enzyme activity and crude lipid content of the four indica rice decreased with aging time,and the crude lipid content of LLY and peroxidase activity of JLY increased slightly at the end of aging.The content of malondialdehyde(MDA),lipase activity and fatty acid value increased firstly and then decreased,but the MDA content of JLY and NX32 increased slightly at the end of aging,and the lipase activity of JLY also increased slightly at the end of aging.When aging at 42℃for 30 days,the germination rate of LLY was the highest,the value of fatty acid and peroxide was the lowest,and the variation range of antioxidant enzyme activity was relatively small.In the accelerated aging process,the germination rate of indica rice was significantly correlated with the activities of superoxide dismutase(SOD),catalase(CAT),ascorbate peroxidase(APX)and lipase.The value of fatty acid was significantly correlated with the activities of SOD,CAT and lipase,and the value of peroxide was significantly correlated with the activities of APX and lipase.
