摘  要:目的调查高原地区某部官兵饮食营养状况,评估该部队官兵膳食摄入是否均衡,为该部队营养饮食提供建议。方法选取驻海拔4350 m高原地区陆军某部一个伙食单位就餐人员为研究对象,共212人,均为男性。采取称量法进行连续4天的膳食调查;采用生活观察法计算官兵每日能量消耗,以确定其劳动强度等级;利用体质量身体脂肪测量器及皮脂测量仪,测量官兵的身高体质量及皮褶厚度,同时监测官兵清晨空腹血糖值。最后按照GJB826A-2010《军人食物定量》、GJB823B-2016《军人营养素供给量》的标准对调研数据进行分析。结果该部官兵平均1天能量消耗为3117.3 kcal,属于中度劳动强度。膳食调查结果显示,该部官兵畜肉、禽肉、禽蛋以及水果的摄入比较充足,但鱼虾、牛奶、大豆等食物摄入不足。能量摄入达标,蛋白质、钠、钾、镁、维生素A等摄入比较充足,甚至远超标准,但碘和维生素B_(1)的摄入远低于军用标准。三大营养素蛋白质、脂肪、碳水化合物的功能比分别为15.40%、33.60%和50.96%,脂肪的供能比稍高,碳水化合物的供能比略低,蛋白质供能较为合理。体质量指数(body mass index,BMI)调查结果显示82.80%的官兵在正常范围,表明大多数官兵营养状况正常,但也存在个别身体消瘦和超重现象。空腹血糖监测结果显示,96.90%的官兵空腹血糖值处于正常范围内。结论该部的饮食结构不够合理,部分食物和营养素摄入达不到军队标准,应平衡饮食、改善膳食结构,以摄入合理营养促进健康。Objective To investigate the dietary and nutritional status of officers and soldiers in plateau region and assess the balanced dietary intake of the troop,so as to provide suggestions for the nutritional diet of the troop.Methods A total of 212 male officers and soldiers were selected as the study subjects in a catering unit of an army unit stationed at a plateau of 4350 m altitude.A total of 4 days dietary survey was carried out by weighing,the daily energy consumption of officers and soldiers was calculated by life observation method,which could determine the grade of their labor intensity.The height,weight and skin fold thickness of officers and soldiers were measured by body mass and body fat measuring instrument and sebum measuring instrument.At the same time,the fasting blood glucose values of the officers and soldiers in the morning were monitored.Finally,the survey data was analyzed and evaluated according to Military Food Ration(GJB826 A-2010)and Army Soldiers Food Nutrients Supply(GJB823 B-2016).Results The average 1-day energy consumption of the officers and soldiers was 3117.3 kcal,which belonged to moderate labor intensity.Nutritional survey showed that the intake of livestock,poultry meat,eggs and fruits were sufficient,but the intake of fish,shrimp,milk,soybeans and other food was insufficient.The energy intake was up to the standard,and the intake of protein,sodium,potassium,magnesium and vitamin A were sufficient or over far beyond the standard,while the intake of iodine and vitamin B;were far below the military standard.The functional ratios of protein,fat and carbohydrate were 15.40%,33.60% and 50.96% respectively.The energy supply ratio of lipid was slightly higher,and that of carbohydrate was slightly lower,the energy supply ratio of protein was more reasonable.The body mass index(BMI)survey showed that 82.80% of the officers and soldiers were within the normal range,indicating that most of the officers and soldiers had normal nutrition,but some were thin or overweight.Fasting blood glucose m
