摘 要:紫苏籽油具有预防心血管疾病、抗氧化、抑制癌细胞增殖、改善认知和记忆、抗菌抗炎、抗过敏、防治非酒精性脂肪肝、影响骨代谢等功效,在食品、医药领域有巨大的市场开发潜力。紫苏籽油的提取方法主要有微波提取、超声波提取、超临界CO_(2)萃取等,提取效率高,安全性好。紫苏籽油的成分研究、比较研究、提取方法及作为食用油和药品用软胶囊的应用为当下研究热点。尽管紫苏籽油有诸多优点,但依然存在生物利用度低、氧化稳定性差等问题,限制了其在食品医药工业中的应用。故今后需进一步关注紫苏籽油的提取加工产业及下游加工产品的开发,提高提取效率,改善油的稳定性,同时持续关注其药理活性的再发现,将药补食补双重作用产品的开发作为研究重点。Perilla seed oil has the effects of preventing cardiovascular disease, antioxidation, inhibiting cancer cell proliferation, improving cognition and memory, antibacterial and anti-inflammatory, anti allergy, preventing nonalcoholic fatty liver and affecting bone metabolism.It has great market development potential in the field of food and medicine.The extraction methods of perilla seed oil mainly include microwave extraction, ultrasonic extraction and supercritical CO_(2)extraction.The extraction efficiency is high and the safety is good.The composition research, comparative research, extraction method of perilla seed oil and its application as soft capsule for edible oil and medicine are the current research hotspots.Although perilla seed oil has many advantages, it still has some problems, such as low bioavailability and poor oxidation stability, which limits its application in food and pharmaceutical industry.Therefore, further attention should be paid to the extraction and processing industry of perilla seed oil and the development of downstream processed products in the future, so as to improve the extraction efficiency and improve the stability of oil.At the same time, we should continue to pay attention to the rediscovery of its pharmacological activity, and focus on the development of products with dual effects of medicine and food.
