摘 要:《食品加工技术》是高职高专院校食品类专业的一门专业必修课程,将思政元素有机地融入课程的理论和实践教学中,有利于全面提升学生的综合素质。以澄清苹果汁的加工实训项目为例,从教学任务、教学目标、教学重难点、教学内容设计等方面进行阐述,重点介绍了如何在教学实施过程中,将课程内容和思政元素有机结合,在培养学生掌握澄清苹果汁加工技术的同时,培养学生的主观能动性和综合分析能力,培养学生的工匠精神、劳动精神和创新能力等,为更好地在教学过程中实现立德树人的根本任务,培养高技术技能型人才奠定基础。Food processing technology is a professional compulsory course for food majors in higher vocational colleges.It organically integrates ideological and political concept into the theoretical and practical teaching of the course,which is conducive to comprehensively improving students’comprehensive quality.Taking the processing training project of clarifying apple juice as an example,this paper expounds the teaching tasks,teaching objectives,teaching difficulties and teaching content design.This paper focuses on how to organically combine the course content with ideological and political elements in the process of teaching implementation,cultivate students’subjective initiative and comprehensive analysis ability,and cultivate students’craftsman spirit,labor spirit and innovation ability,so as to better realize the fundamental task of Building Morality and cultivating people in the process of teaching,Lay the foundation for cultivating high-tech and skilled talents.
