摘  要:目的了解青岛市食品中主要污染物及有害因素的污染水平和趋势,确定危害因素的分布和可能来源,为开展食品安全风险评估与预警、标准跟踪评价、监管措施及方向提供依据。方法全市10个区市监测点按照《2020年山东省食品安全风险监测实施方案》及《2020年国家食品污染和有害因素风险监测工作手册》等方法进行采样、检测。结果 2020年共监测13大类63个小类食品34批次共566份样品,超标样品35份,违禁样品3份,超标率为6.71%,合格率为93.46%(529/566),样品超标率最高的食品类别为水产动物及其制品(50.00%,30/60),其他依次为肉与肉制品(6.67%,2/30)、蛋及蛋制品(5.00%,1/20)、蔬菜及其制品(2.05%,4/195)、谷物及其制品(1.67%,1/60)。结论青岛市食品安全质量总体优良,食品安全整体形势持续稳定向好,但水产动物及其制品化学污染物污染严重,应加大监测力度,保证食品安全。Objective To understand the pollution levels and trends of major contaminants and harmful factors in food in Qingdao City, to determine the distribution and possible sources of hazardous factors, and to provide basis for carrying out food safety risk assessment and early warning, standard tracking evaluation, and regulatory measures.Methods In accordance with the Implementation Plan of Shandong Food Safety Risk Monitoring in2020 and theWork Manual of National Food Contamination and Hazardous Factors Risk Monitoring in2020, the sampling and testing were conducted at the 10 districts and municipalities in Qingdao.Results In 2020, a total of 566 samples of 34 batches of 63 sub-categories of food in 13 categories were monitored, of which 35 samples exceeded the standard, and 3 samples were found to be prohibited substances. The exceeding rate was 6. 71% and the passing rate was 93. 46%(529/566). The food category with the highest sample exceeding rate was aquatic animals and their products(50. 00%, 30/60), followed by meat and meat products(6. 67%, 2/30), eggs and egg products(5. 00%, 1/20), vegetables and their products( 2. 05%, 4/195), cereals and their products( 1. 67%, 1/60).Conclusion The quality of food safety in Qingdao is excellent, and the overall situation of food safety is stable and good. However, the contamination of chemical pollutants in aquatic animals and their products is serious, so more monitoring should be done to ensure food safety.
