摘  要:黄皮是一种含有大量生物活性物质的热带水果,其所富含的维生素C、氨基酸、矿物质、多糖等对人体有抗肿瘤、抗氧化、降糖、降脂等多种功效。黄皮果入药有消食、化痰等作用,具有较高的营养及保健价值。由于黄皮果采后易受环境因素影响导致货架期较短,且当前的保鲜技术还不够完善,因此探索黄皮的加工工艺是亟需解决的问题。本文总结了黄皮果及其副产物的营养成分和加工研究现状,旨在为黄皮精深加工技术的研究提供理论依据。Clausena lansium is a tropical fruit that contains a lot of biologically active substances. It is rich in vitamin C, amino acids, minerals, polysaccharides, etc, and which have anti-tumor, anti-oxidation, hypoglycemic, and lipid-lowering effects on human health. C. lansium is used as medicine with the functions of digesting food,resolving phlegm, etc. However, after harvesting, C. lansium is easily affected by environmental factors, and the preservation technology is not perfect yet, which resulting in shorter shelf life. Therefore exploring the processing technology of C. lansium is an urgent problem to be solved. This article summarized the nutrient composition and processing research status of C. lansium and its by-products, aiming to provide a theoretical basis for the further development of C. lansium processing.
