摘  要:酿酒丟糟是固态法白酒酿造的主要副产物。酿酒丟糟含丰富的纤维素、半纤维素和淀粉等碳水化合物,经降解糖化后,是微生物发酵良好碳源,若不经处理直接排放到环境中,既会造成环境污染,又会造成资源的浪费。综述了近年来酿酒丟糟的降解糖化工艺的报道,包括采用酸处理、碱处理、酶处理和多酶复配处理等方法,为酿酒丟糟降解糖化,进而发酵为乙醇等化工原料,实现酿酒丟糟的资源化、高效利用提供参考。Spent grains are the main byproduct of the production process of Baijiu by solid-state fermentation.Spent grains contain a large amount of cellulose,semi-cellulose and starch,which are good carbon sources for microbial fermentation after degradation and saccharification.The discharge of spent grains without treatment would not only pollute the environment,but also waste resources.This paper reviews the reports on the degradation and saccharification processes of spent grains in recent years,including acidolysis,alkaline hydrolysis,enzymolysis and multi-enzyme treatment,etc.,so as to provide reference for efficient recycling and utilization of spent grains.
