摘  要:采用生理生化方法,对野生和养殖棘头梅童鱼肌肉常规营养成分、氨基酸和脂肪酸组成进行了测定。结果表明,与野生棘头梅童鱼相比,养殖棘头梅童鱼肌肉中粗脂肪含量较低,水分含量较高,且差异显著(P<0.05),蛋白质和灰分含量则无显著性差异(P>0.05);在氨基酸方面,野生和养殖棘头梅童鱼肌肉中均检出18种氨基酸,其中养殖组的酪氨酸含量显著高于野生组(P<0.05),其他种类氨基酸含量无显著性差异(P>0.05)。野生和养殖棘头梅童鱼的8种人体必需氨基酸分别占氨基酸总量的41.06%和42.05%,符合FAO/WHO推荐的理想蛋白质标准;在脂肪酸方面,野生和养殖棘头梅童鱼肌肉中各检测出17种脂肪酸,养殖组饱和脂肪酸(SFA)和单不饱和脂肪酸(MUFA)显著高于野生组,而野生组多不饱和脂肪酸(PUFA)显著高于养殖组(P<0.05)。In this study, the proximate composition, amino acid composition and fatty acid composition in muscle of wild and cultured Collichthys lucidus were determined using conventional physiological and biochemical analysis methods.The results showed that, compared with the wild C. lucidus, the content of moisture in muscle of cultured C. lucidus was significantly higher, while the content of crude fat was significantly lower(P<0.05). There were no significant differences in the content of 18 determined amino acids(P>0.05),except for significantly higher tyrosine content in the muscle of cultured C. lucidus.Moreover, 8 essential amino acids(EAA) accounted for 41.06% and 42.05% of the total amino acids(TAA) respectively, which conformed to the standard suggested by the Food and Agriculture Organization of the United Nations/World Health Organization(FAO/WHO).In addition, 17 fatty acids were detected in the muscle of both wild and cultured C. lucidus.The percentages of saturated fatty acid(SFA) and monounsaturated fatty acid(MUFA) were significantly higher in the muscle of cultured C. lucidus,while the percentage of polyunsaturated fatty acid(PUFA) was significantly higher in the wild C. lucidus.
