摘　　要：近红外光谱技术是一种具有绿色、快速、无损优势的检测技术,其在白酒行业中的应用越来越广泛。介绍了近红外光谱技术的工作原理及优势,主要介绍了近红外光谱技术在白酒行业中酿酒原料、酿酒大曲、发酵酒醅、半成品及成品酒检测方面的研究应用及在线检测及时的开发研究,分析了该技术在白酒行业应用推广过程中存在的问题,并展望了其应用前景。Near infrared spectroscopy technology is widely used in Baijiu industry as a green,fast and nondestructive testing technology.The principle and advantages of near infrared spectroscopy technology are introduced.The application status of near infrared spectroscopy in the raw materials,fermentation process,semi-finished products and finished products detection and on-line detection of the Baijiu industry is mainly introduced.The problems in the application and extension of the technology in Baijiu industry are analyzed,and its application prospect is prospected.
