摘  要:目的调查海南省贝类中43种元素的含量。方法随机抽取市场和超市中居民常食用的散装贝类样品,根据《2020年国家食品污染物和有害因素风险监测工作手册》中“食品中多元素分析的标准操作程序”,采用电感耦合等离子体质谱法检测43种元素含量。运用SAS 9.2比较各地区贝类样品中元素含量。结果海南省12个沿海市县和洋浦经济开发区共149份样本。铅、铬、镉和铝的检出范围分别是0~2.368 mg/kg,0.0450~2.12 mg/kg,0.0174~5.77 mg/kg和3.86~637 mg/kg;平均值分别是0.266,0.284,1.38和82.7 mg/kg。铅、铬、镉的超标率分别是4.7%,0.7%和29.5%。铝因为无国家标准限值,所以无法判断是否超标。铅(H=21.209,P=0.047)、铝(H=38.043,P<0.001,)和铬(H=22.761,P=0.030)的地区间差异有统计学意义;镉的地区间差异无统计学意义(H=16.873,P=0.154)。结论海南省贝类中镉的超标率较高,铅超标次之。应加强贝类的监督监测,同时防止近海水体的污染。Objective To investigate and analyze 43 element contents in shellfish from Hainan Province.Methods The shellfish in bulk were randomly selected from markets and supermarkets,and the contents of 43 elements were detected by inductively coupled plasma mass spectrometry(ICP-MS)according to the standard operating procedures for multi-element analysis of food in the Manual for China National Food Contamination and Harmful Factors Risk Monitoring in 2020.SAS 9.2 software was used for statistical analysis.Results A total of 149 samples were collected from 12 coastal cities and the Yangpu Economic Development Zone in Hainan Province.The detection ranges of lead,chromium,cadmium and aluminum were 0-2.368 mg/kg,0.0450-2.12 mg/kg,0.0174-5.77 mg/kg,and 3.86-637 mg/kg,respectively.The average values of lead,chromium,cadmium and aluminum were 0.266 mg/kg,0.284 mg/kg,1.38 mg/kg,and 82.7 mg/kg,respectively.The over standard rate of lead,chromium and cadmium were 4.7%,0.7%and 29.5%,respectively.Due to lack of national standard limit for aluminum,it was impossible to judge whether it exceeded the standard.There were significant regional differences in lead(H=21.209,P=0.047),aluminum(H=38.043,P<0.001),and chromium(H=22.761,P=0.030).There was no significant regional difference in cadmium(H=16.873,P=0.154).Conclusion The exceedance rate of cadmium in shellfish in Hainan Province is high,and the exceedance rate of lead ranks the second.The supervision and monitoring of shellfish should be strengthened,while preventing the pollution of offshore waters.
