摘  要:目的对南京市部分餐饮食品中蜡样芽孢杆菌等5种常见食源性致病菌进行检测,为食品污染的市场监管提供数据支持。方法2012—2017年对南京市市场上部分餐饮食品进行随机抽样检测,按照常规方法进行蜡样芽胞杆菌、单增李斯特菌、金黄色葡萄球菌、沙门菌、志贺菌的检测。结果2012—2017年连续监测6年,未检出单增李斯特菌、沙门菌、志贺菌,只检出蜡样芽胞杆菌和金黄色葡萄球菌,两种菌总检出率2016年最高(8.3%),其次为2015年(3.8%),2012—2014年检出率分别为1.6%、1.6%、1.5%,而2017年未检测到常见致病菌,各年致病菌检出阳性率差异有统计学意义(χ^(2)=22.26,P<0.01)。从品种看,儿童食品检出率最高(11.1%,2016年);其次分别为炒制米面制品(8.9%,2012年)和盒饭(饭菜混合)(7.7%,2015年);烧烤(素)(0.6%,2013年)检出率较低,不同品种致病菌检出差异有统计学意义(χ^(2)=34.76,P<0.01)。结论2012—2017年南京市部分餐饮食品中污染的致病菌主要为蜡样芽胞杆菌和金黄色葡萄球菌,主要被污染品种为儿童食品、炒制米面制品和盒饭,应当引起市场监管的高度重视。Objective To detect five common food-borne pathogens such as Bacillus cereus in some catering food in Nanjing,and to provide data for market supervision of food contamination.Methods The random survey of some catering food in marketplaces in Nanjing from 2012 to 2017 was conducted,Bacillus cereus,Listeria monocytogene,Staphylococcus aureus and Salmonella,Shigella were detected by routine methods.Results No Listeria monocytogenes,Salmonella or Shigella were detected upon consecutive 6 years from 2012 to 2017,but Bacillus cereus and Staphylococcus aureus were detected,the total detection rate of such two bacteria was maximum in 2016(8.3%),followed by that in 2015(3.8%),which were 1.6%,1.6%and 1.5%respectively from 2012 to 2014,while no common pathogens were detected in 2017.The difference in the positive rate of pathogens detected was statistically significant(χ^(2)=22.26,P<0.01).Viewed from varieties,the detection rate of children’s food was maximum(11.1%,2016);followed by fried rice flour products(8.9%,2012)and boxed rice(mixed food)(7.7%,2015);while the positive rate of barbecue(vegetarian)(0.6%,2013)was low,and the difference in the detection rate of pathogens among different varieties was statistically significant(χ^(2)=34.76,P<0.01).Conclusion The pathogens in some catering foods in Nanjing from 2012 to 2017 are mainly Bacillus cereus and Staphylococcus aureus.The main polluted varieties are children’s food,fried rice noodles and box meal,and the concerns from market supervisory authority should be drawn.
