摘　　要：本文使用配备毛细管柱和氢火焰离子检测器的气相色谱仪建立了一种顶空气相色谱法快速测定啤酒中乙醛含量的方法。结果表明,乙醛标准曲线范围在2~30 mg/L时具有良好的线性关系,相关系数为0.9998;对同一啤酒重复测定6次,相对标准偏差为1.6%,检出限为0.1 mg/L;对啤酒进行加标回收测定,回收率在83.8%~95.5%。该方法操作简单、灵敏度高、结果准确度高,适合啤酒中乙醛含量的测定。A headspace gas chromatographic method for the rapid determination of acetaldehyde in beer was established by using a gas chromatograph equipped with capillary column and hydrogen flame ion detector.The results showed that the acetaldehyde standard curve had a good linear relationship in the range of 2~30 mg/L,the linear correlation coefficient r was 0.9998;The relative standard deviation was 1.6%and the detection limit was 0.1 mg/L;The recovery rate ranged from 83.8%to 95.5%.The method has the advantages of simple operation,high in sensitivity and high in accuracy,which is suitable for the determination of cyanide content in beer.
