摘 要:社会经济的快速发展提高了人们的生活水平,与此同时人们对于生活质量的要求越来越高,尤其是在饮食安全方面更为注重。酱油是人们日常生活中不可缺少的调味品,能更好地满足人们的味蕾需求。保障人们的饮食安全必须要加强对酱油发酵初期的质量管理,以确保酱油食用质量的提高。PDCA循环工具是开展发酵酱油全面质量管理的基础依据,通过基于此项工具实施质量管理措施,能够提升发酵酱油质量,从而更好地满足人们的饮食需求。本文通过对PDCA循环工具在发酵酱油质量管理中的应用进行分析,以期进一步提高酱油质量,为人们的日常饮食水平提升奠定良好基础。The rapid development of social economy has greatly improved people’s living standards,and at the same time,people have higher and higher requirements for quality of life,especially in terms of food safety.Soy sauce is an indispensable condiment in people’s daily life and plays an important role in better satisfying people’s taste buds.In order to ensure the safety of people’s diet,it is necessary to strengthen the quality management of soy sauce fermentation in the early stage to ensure the improvement of soy sauce consumption quality.The PDCA cycle tool is the basis for the overall quality management of fermented soy sauce.By implementing quality management measures based on this tool,the quality of fermented soy sauce can be improved,so as to better meet people’s dietary needs.This paper analyzes the application of PDCA cycle tool in the quality management of fermented soy sauce,in order to further improve the quality of soy sauce and lay a good foundation for the improvement of people’s daily diet level.
