摘 要:纵肋织纹螺(Nassarius variciferus),俗称海锥,主要分布于中国北方,产量高,价格昂贵。为了解纵肋织纹螺营养价值和特点,对其营养成分进行了分析与评价。结果表明:纵肋织纹螺肌肉中水分含量为77.61%,粗蛋白含量为14.42%,粗脂肪含量为0.94%,以及粗灰分含量为2.73%;脂肪酸测定发现,纵肋织纹螺中包含14种脂肪酸,其中饱和脂肪酸(SFA)6种,单不饱和脂肪酸(MUFA)3种,多不饱和脂肪酸(PUFA)5种,质量分数分别为29.38%,29.54%,18.41%,EPA+DHA质量分数为16.24%;氨基酸测定发现,纵肋织纹螺总氨基酸(TAA)含量为151.79mg/g,其中必需氨基酸总含量为49.94mg/g,占氨基酸总量的32.90%,呈味氨基酸总含量为65.17mg/g,占总氨基酸总量的42.94%。综合分析和评价纵肋织纹螺营养成分,其蛋白质营养价值高,脂肪酸含量丰富,味道鲜美,是开发潜力较大的海洋经济贝类。Nassarius variciferus,commonly known as sea cone,is mainly distributed in north of China,with high yield and high price.In order to understand the nutritional value and characteristics of Nassarius variciferus the nutritional components of Nassarius variciferus were analyzed and evaluated.The results showed that the water content,crude protein content,crude fat content and ash content of Nassarius variciferus muscle were 77.61%,14.42%,0.94% and 2.73% respectively.The fatty acid determination showed that there were 14 kinds of fatty acids in H.SPP.,including 6 kinds of saturated fatty acids(SFA),3 kinds of monounsaturated fatty acids(MUFA),5 kinds of polyunsaturated fatty acids(PUFA),the mass fraction of EPA+DHA was 29.38%,29.54%,18.41%,16.24%,respectively.The contents of total amino acids(TAA) were 151.79 mg/g,including 49.94 mg/g essential amino acids and 65.17 mg/g flavoring amino acids,accounting for 32.90% and 42.94% of the total amino acids.Comprehensive analysis and evaluation of the nutritional components of Nassarius variciferus showed that it has high protein nutritional value,rich fatty acid content and delicious taste.It is a Marine economic shellfish with great potential for development.
