摘  要:目的分析绵阳市2011—2020年食品中主要微生物污染情况,为食源性疾病的监测和防控提供科学依据。方法2011—2020年绵阳市共采集21大类2387份食品样品,按照《国家食品污染和有害因素监测工作手册》中食品微生物检测方法对金黄色葡萄球菌、沙门氏菌、铜绿假单胞菌、蜡样芽胞杆菌等食源性致病菌进行检测、分离、鉴定。结果2011—2020年绵阳市共检测2387件样品,220份样品检出食源性致病菌,检出率为9.22%。共分离到11种259株阳性菌株,检出率居前3位的是蜡样芽胞杆菌(19.86%)、克罗诺杆菌属(9.56%)、其他肠杆菌科(5.86%)。在17类食品中检出致病菌,居前3位的是冲调谷物制品(32.50%)、婴幼儿谷类辅助食品(28.23%)和生禽肉(23.33%)。蛋及蛋制品、果蔬类、鲜湿米粉、坚果与籽类四类食品未检出致病菌。结论绵阳市市售食品存在一定的食源性致病菌污染,相关部门应对存在污染的食品加强管理,确保食品安全。Objective To analyze the status of contamination of main microorganisms in food in Mianyang city from 2011 to 2020,and to provide evidence for monitoring and prevention of food borne diseases.Methods According to the methods in the national manual for risk monitoring of food contaminants and harmful factors,2387 samples from 21 types of food were collected.Staphylococcus aureus,Salmonella,Psudomnas aeruginosa,Bacillus cereus were tested,separtation and indentification.Results A total of 2387 food samples were detected from 2011 to 2020,220samples showed to be positive for pathogenic bacteria;the total detection rate was 9.22%.Total259 strains of pathogenic bacteria were separated,the top three pathogens were Bacillus cereus(19.86%),Cronobacterspp(9.56%)and Enterobacteriaceae(5.86%).Pathogenic bacteria was detected from 17 categories of food samples,the highest detection rate of Pathogenic bacteria was the processed cereal products(32.50%),followed by cereal-based complementary foods for infants and young childrez(28.23%),raw poultry meat(23.33%).Pathogenic bacteria were not detected from egg products,fruit and vegetables,instant fresh rice noodle,roasted nuts and seeds terms.Conclusions Food borne pathogens contamination in food sold in markets was existent in Mianyang from 2011 to 2020,food safety risk monitoring should be strengthened to prevent and control food borne disease.
