摘  要:红豆、薏米和茯苓均具有药食两用价值,联合食用具有祛湿利水、健脾宁心的功效。将三者制成复合速溶粉,不仅食用方便,而且有利于促进人体对活性成分的吸收,可以满足人们对营养且兼具保健功效的新型食品的需求。本文以红豆、薏米和茯苓的提取物为原料,采用喷雾干燥工艺制备了三者的复合速溶粉,重点研究了喷雾干燥工艺条件对复合速溶粉的出粉率及微观形貌的影响。Vigna angularis,semen coicis and poria cocos all have high nutritional and medical values.Combined consumption of them has the functions of clearing damp,inducing diuresis and tonifying spleen.The composite instant powder of vigna angularis,semen coicis and poria cocos,which is not only convenient to eat,but also conducive to the absorption of active ingredients,can meet people’s needs for new foods with nutrition and health care effects.In this paper,the composite instant powders were prepared by spray drying method using the extract of vigna angularis,semen coicis and poria cocos as raw materials.The effects of spray drying conditions on the powder yield and microstructure of the composite instant powder were studied.
