摘 要:硒是人体必需的微量元素之一,具有抗氧化、增强免疫力等多种生物学功能。人体缺乏硒会引发癌症、糖尿病等多种疾病。为解决这一问题,需要开发出多种安全、高效的补硒产品。无机硒的毒性远高于有机硒,且不利于人体的吸收,因此为了将无机硒转化为有机硒的状态,相关学者以微生物为富硒生物载体进行了大量的研究,并开发出了各式各样的富硒食品。本文结合近年来所做的研发工作和收集的文献资料,浅析细菌类微生物、单细胞真菌、丝状真菌微生物、大型食药用真菌、虫生型真菌及微藻类微生物富硒食品的研究开发情况,并对微生物富硒食品的研发前景和有待解决的问题进行简要述评。Selenium is one of the necessary trace elements for human body.It has many biological functions,such as anti-oxidation,enhancing immunity and so on.Lack of selenium can cause cancer,diabetes,anemia and other diseases.In order to solve this problem,many kinds of safe and efficient selenium supplement products need to be developed.Because the toxicity of inorganic selenium is much higher than that of organic selenium and is not conducive to the absorption of human body,in order to convert inorganic selenium into organic selenium,people have carried out a lot of research using microorganisms as selenium rich biological carriers,and developed a variety of selenium rich foods.Recently,based on the research and development work done by the author and the collected literature,this paper analyzes the recent research and development status of selenium rich food of bacterial microorganisms,unicellular fungi,filamentous fungi,large edible and medicinal fungi,entomogenous fungi and microalgae,and briefly reviews the research and development prospect and problems to be solved of microbial selenium rich food.
