摘 要:2019年在天津市16个区共采集249份冷冻饮品,微生物不合格率为7.2%。霉菌、酵母菌检出率分别为14.9%和7.2%,蜡样芽胞杆菌检出率为11.2%,其余致病菌均未检出。本次抽检结果显示天津地区市售冷冻饮品卫生质量亟待提高,建议企业提高自身生产过程中微生物的防控水平,监管部门加强对冷冻饮品的风险监测和对生产经营企业的监督管理,保障冷冻饮品的质量安全。In 2019,249 frozen drinks were collected in 16 districts of Tianjin,and the microbial unqualified rate was 7.2%.The detection rates of mold and yeast were 14.9% and 7.2% respectively,and the detection rate of Bacillus cereus was 11.2%.The sampling results show that the hygienic quality of frozen drinks sold in Tianjin needs to be improved urgently.It is suggested that enterprises improve the prevention and control level of microorganisms in their production process,and the regulatory authorities strengthen the risk monitoring of frozen drinks and the supervision and management of production and operation enterprises,so as to ensure the quality and safety of frozen drinks.
