摘　　要：脂类作为七大营养素之一,在维持机体新陈代谢、体力活动,以及促进生长发育等方面具有重要作用。功能性油脂作为脂类的一部分,除了参与机体能量供给外,还具有多种生理功能。随着对功能性油脂研究的不断深入,其在食品工业中的研究日趋广泛。本文对食品加工过程中功能性油脂的应用价值进行了分析,探讨了功能性油脂在食品工业中的应用和今后的发展方向。As one of the seven nutrients,lipids play an important role in maintaining metabolism,physical activities and promoting growth and development.Functional oils,as a part of lipids,not only participate in energy supplement,but also have a variety of physiological functions.With the further studies of functional oils,its research in food industry is becoming more and more extensive.This paper analyzes the application value of functional oils in food processing and discusses the application and development direction of functional oils in food industry.
