摘  要:为开发杜仲速溶固体饮料,本文以杜仲叶经提取、浓缩、冷冻干燥制备的杜仲叶浸膏粉为原料,通过单因素和正交试验对其配方进行优化。结果表明,各因素影响的主次顺序为杜仲叶浸膏粉>酸味剂>甜味剂>红枣粉,最佳配方为杜仲叶浸膏粉10 g、甜味剂(麦芽糖醇+冰糖粉的质量比为2∶3)44 g、酸味剂0.75 g以及红枣粉21 g。该配方下所制产品相关理化指标符合国家标准,用1∶10热水冲调,杜仲速溶固体饮料溶解性较好,透亮无杂质,口感清爽,具有杜仲叶独特风味,且生产成本较低,可为杜仲叶产品开发及杜仲资源的综合利用提供科学参考。In order to develop an instant solid beverage of Eucommia ulmoides Oliver,Eucommia ulmoides leaves extract powder prepared by extraction,concentration and spray freeze-drying was used as raw material,the formula of Eucommia ulmoides Oliver instant solid beverage was optimized through single factor and orthogonal experiments.The results showed that the order of the influencing factors was Eucommia ulmoides leaves extract powder>sour agent>sweetener>red date powder,and the best formula was Eucommia ulmoides leaves extract powder 10 g,sweetener(maltitol∶rock sugar powder=2∶3)44 g,sour agent 0.75 g,red date powder 21 g.The relevant physical and chemical indicators of the beverage complied with national standards.When mixed with 1∶10 hot water,the Eucommia ulmoides Oliver instant solid beverage has good solubility,translucent and no impurities,fresh taste,unique flavor of Eucommia ulmoides leaves,and low production cost.It can provide a scientific reference for the development of Eucommia ulmoides leaves and the comprehensive utilization of Eucommia ulmoides Oliver.
