摘 要:为研究不同日龄东兰乌鸡肌肉氨基酸含量的差异,试验选择同一批次东兰乌鸡进行饲养,分别在90、120、150、180和210日龄时进行屠宰,取胸肌和腿肌进行肉质氨基酸含量检测,分析不同日龄东兰乌鸡肌肉氨基酸(TAA)、必需氨基酸(EAA)、非必需氨基酸(NEAA)和风味氨基酸(FAA)含量、氨基酸比值(RAA)、氨基酸比值系数(RC)以及比值系数分(SRC)。结果表明:(1)180日龄东兰乌鸡鸡肉中17种氨基酸的TAA、EAA、NEAA分别为22.5、9.35、13.15 g/100 g,均高于其他日龄,不同日龄东兰乌鸡鸡肉的EAA/TAA及EAA/NEAA分别为40.87%~42.54%、69.12%~73.48%。(2)东兰乌鸡鸡肉中必需氨基酸质量分数均高于FAO/WHO模式,210日龄的亮氨酸质量分数最高,150日龄的苯丙氨酸+酪氨酸质量分数和赖氨酸质量分数最高。(3)90~210日龄东兰乌鸡鸡肉中RC值为0.73~1.44,不同日龄的SRC分别为81.77、80.70、77.84、80.31、80.12,每个阶段的SRC均在80左右,表明东兰鸡肉蛋白质营养价值较高。(4)180日龄鸡肉的门冬氨酸及谷氨酸的含量最高,分别为2.15 g/100 g、3.47 g/100 g,均高于其他日龄。90日龄至210日龄的FAA分别为11.28%、11.65%、11.47%、11.8%、11.17%,表明180日龄时FAA最高。综合试验数据,180日龄东兰乌鸡鸡肉肉质更好、味道更浓郁,具有更好的营养价值。In order to study the difference of amino acid content in the meat of different day-old Donglan black chicken,the same batch of Donglan black chickens were selected and slaughtered at 90,120,150,180 and 210 days.The pectoral and leg muscles were sent to test the amino acids content.The contents of amino acid(TAA),essential amino acid(EAA),nonessential amino acid(NEAA)and flavor amino acid(FAA),amino acid ratio(RAA),amino acid ratio coefficient(RC)and ratio coefficient(SRC)were analyzed.The result shows that:(1)The TAA,EAA,NEAA of 180 days old Donglan black chicken were 22.5 g/100 g,9.35 g/100 g,13.15 g/100 g,which were higher than other age groups.The EAA/TAA and EAA/NEAA of different days old groups were in the range of 40.87%~42.54%and 69.12%~73.48%,respectively.(2)The EAA content of Donglan black chicken was higher than that of FAO/WHO model,and the leucine content of 210 days old group was the highest,the phenylalanine+tyrosine content and the lysine content of 150 days old group were the highest.(3)The RC of 90~210 days old Donglan black chicken were from 0.73 to 1.44,and the SRC of the test groups were 81.77,80.70,77.84,80.31,80.12,respectively,the SRC of each stage is about 80,indicating that the protein nutritional value of Donglan black chicken was high.(4)The contents of aspartic acid and glutamic acid in 180 days group were 2.15 g/100 g and 3.47 g/100 g,respectively,which were higher than those of other days.The free amino acid from 90~210 days group were 11.28%,11.65%,11.47%,11.8%and 11.17%respectively,and the free amino acid of 180 days group was the highest.According to the comprehensive experimental data,the meat of 180 days old Donglan black chicken was better in quality,taste and nutritional value.
