摘　　要：白酒糟是白酒生产后的固体废弃物,来源广泛,营养丰富,但难以保存且容易污染环境。因此白酒糟的再利用研究对实现白酒行业资源充分利用和绿色生产具有重大意义,使其成为相关领域的研究热点。本文对近年来白酒糟再利用研究现状进行综述,概述了白酒糟的产量情况及其组成成分,重点介绍了其主要利用途径,包括蛋白饲料、生物有机肥、化工产品等用途,并对其未来研究方向进行了展望,以期对酒糟的综合利用研究提供借鉴。Distillers grains are a solid waste of the production process of Baijiu.Distillers grains have a wide range of sources and rich nutrition,but are difficult to preserve,and will easily pollute the environment.In order to realize full utilization of resources and green production of Baijiu,it is of great significance to study the reuse of distillers grains.In this paper,the current research status of the reuse of distillers grains is reviewed,the output and components of distillers grains are introduced,and the main utilization ways of distillers grains are discussed,including protein feed,bio-organic fertilizer,chemical products,etc.The future research direction is proposed.This paper serves to provide reference for the comprehensive utilization of distillers grains.
