摘  要:目的 分析2018年-2021年西安铁路辖区春运和暑运期间食品卫生安全保障情况及食品菌群检测情况。方法 调查分析2018年-2021年西安铁路辖区春运和暑运期间的食品卫生安全保障情况,包括食品及原料、餐饮容器具的卫生安全检测情况,以及食品的菌群检测情况,随后对不同年上述检测的合格率进行对比。结果 2020年、2021年春运期间以及2020年暑运期间食品及原料、餐饮容器具的卫生安全检测合格率均显著高于2018年、2019年同期(P <0. 05)。2020年、2021年春运期间以及2020年暑运期间食品菌群检测情况如菌落总数、大肠菌群总数及总体检测合格率均显著高于2018年、2019年同期(P <0. 05)。2018年-2021年春运、暑运期间食品食源性致病菌检测合格率均为100. 00%。结论 对铁路春运和暑运期间食品卫生安全保障情况进行及时检验,并加强合理防控,可提高食品卫生安全。Objective To analyze the situation of food hygiene and safety security and the detection of food flora in Xi’an railway area during the Spring and Summer transportations in 2018-2021.Methods To investigate and analyze the food hygiene and safety during the Spring,and Summer transportations in Xi’an railway area from 2018 to 2021,including the hygienic and safefy detection of food and raw materials and catering containers and the detection of food flora,and then the qualified rates of the above tests in different years were compared.Results The qualified rates of health and safety testing of food,raw materials/and catering containers during the Spring transportation in 2020 and 2021,and the Summer transportation in 2020 was significantly higher than those in the same period in 2018 and2019(P<0.05).The food microbiota detection,such as the qualified rates of the total number of colonies,the qualified rates of the total number of coliform bacteria and the qualified rates of the overall detection during the Spring transportation in 2020 and 2021 and the Summer transportation in 2020 were significantly higher than those in the same period in 2018 and 2019(P<0.05).The qualified rates of foodbome pathogenic bacteria detection during Spring and Summer transportations in 2018—2021 were both 100.00%.Conclusion Timely inspection of food hygiene and safety and strengthening reasonable prevention and control during Spring and Summer transportations can improve food hygiene and safety.
