摘  要:近年来,我国的酒精性肝损伤发病率日益提高,且呈年轻化趋势。中国的食药用菌资源丰富,研究表明食药用菌的黄酮类、多酚类、皂苷类、多糖类、萜类和生物碱类等活性物质对肝损伤具有理想的治疗效果,且毒副作用小,深加工产品市场潜力大,前景广阔。目前对于食药用菌活性成分防护酒精性肝损伤作用的研究日渐深入,在体内外证实多种食用菌活性成分可以有效治疗酒精性肝损伤。为加深对酒精性肝损伤的防护研究、开发新型保肝营养功能性食品和生物医药,文章对酒精性肝损伤的主要发病机制和食药用菌活性成分防护酒精性肝损伤的相关研究进展进行综述。In recent years,increasing incidence of alcoholic liver disease in China has been developed,which shows a younger trend.The resources of edible and medicinal fungi are abundant in China.It is investigated that the active substances from the edible and medicinal fungi such as flavonoids,polyphenols,saponins,polysaccharides,terpenes and alkaloids have ideal therapeutic effects on liver disease with small side effects.The market potential of deep-processed products of the fungi is great and the prospect is broad.At present,the research on the protective effect of the active ingredients of edible and medicinal fungi on alcoholic liver disease is deepening day by day.It has been proved in vivo and in vitro that various active ingredients of edible fungi can effectively treat alcoholic liver disease.In order to deepen the research on the protection of alcoholic liver disease and to develop new functional foods and biomedicine,this paper reviewed the main pathogenesis of alcoholic liver disease and related research progress on the protection of alcoholic liver disease by the active ingredients of edible and medicinal fungi.
