摘 要:为提高卧式静止杀菌釜验证方法的准确性和适用性,以卧式静止淋水杀菌釜为对象优化热分布测试方法。考虑到杀菌釜分隔板水循环堵点,在现有验证方法基础上,增加设备水循环堵点位置的布点,以确定设备冷点的准确位置。以传热方式为热对流的产品为对象优化热穿透测试方法,在罐体侧壁五等分孔,并分别在不同位置热穿透测试,以确定产品准确冷点位置。结果表明:优化前后的热分布测试方法显示设备升温时间和恒温段最大温差存在显著差异,探针达到合理数量后再增加对试验结果准确性影响不大;优化后的热穿透测试方法显示产品不同位置的F_(0)值具有显著差异,罐身底部向上1/3位置的F_(0)值最低。热分布测试中增加水循环堵点区域布点可以确定设备冷点的准确位置,温度探针在达到合理数量后,再增加其对热力杀菌验证准确性并无显著影响。热穿透测试中,针对传热方式为热对流的产品,在其冷点位置进行热穿透测试更加准确,冷点位于罐身底部向上1/3位置。To improve the accuracy and applicability of the thermal sterilization verification method,the horizontal static retort,of which heat transfer medium was spray water,was taken as the object to optimize the temperature distribution test method.On the basis of the existing verification methods,considering the blocking point of dividing plate in water circulation,the amount of probes increased and placed to blocking points of equipment,which was to determine the accurate location of the cold point of the equipment.The products by heat convection was taken as the object to optimizetemperature penetration test method.On the basis of the existing verification method,five equal parts of holes at the tank side wall were punched,at which temperature penetration test was carried out,so as to determine the accurate cold point position of the product.Theresults showed that there were significant differences in the coming-up time and the maximum temperature difference in the temperature holdingphase before and after optimization,and the accuracy of the test results was not affected by increasing the number of probes after its reached reasonable.The optimized temperature penetration test method showed that the F_(0)value at different positions of the product had significant differences and the F_(0)value at the bottom of tank 1/3 up was the lowest.In the temperature distribution test,the accurate location of the cold point in the equipment could be determined by increasing probes distribution of the blocking point area.When the number of probes reachreasonable,it had no significant effect on the accuracy of the thermal sterilization verification by continuing to increase probes.In the temperature penetration test,for the products by thermal convection,it was more accurate to make temperature penetration test at the cold point,which was located at the bottom of the tank 1/3 up.
