摘  要:西湖龙井自发展到现在,以其“色绿、香郁、味甘、形美”四绝著称于世,被誉为“绿茶皇后”。随着历代茶器的演进和品饮方式的革新,人们对于西湖龙井茶的冲泡越发讲究,注重选茶、选水、精心配制茶具。本文旨在追溯龙井茶在明清时期有文字明确记载的四种品饮方式,以及当代五种西湖龙井茶适泡茶器、适泡方式上初略研究,阐释九种冲泡方式对西湖龙井茶所呈现的不同风味。Hailed as“Queen of the Green Tea”,West Lake Longjing tea has been well-known for its"green color,fragrant aroma,mellow taste and beautiful appearance"ever since its rise.With the evolution of tea sets and innovations of tea drinking methods over time,tea drinkers were increasingly particular about the preparations of West Lake Longjing tea.They would choose fine tea,water and tea sets.This article aims to trace the four recorded drinking methods of Longjing tea in the Ming and Qing dynasties.It also makes a tentative study into the five appropriate tea things and brewing ways concerning Longjing tea nowadays,elucidating the various flavors of Longjing tea brought up by the different nine brewing methods.
