摘 要:目的分析2019年辽宁省市场出售食品的单核细胞增生李斯特菌(Listeria monocytogenes)污染情况,初步确定该菌易引起的高危食品种类,为食品风险监测提供参考。方法从我省13个监测点中共抽取753份不同种类食品样本,根据国标法GB4789.30-2016《食品安全国家标准食品微生物学检验单核细胞增生李斯特氏菌检验》对样本进行L.monocytogenes菌株的分离及生化鉴定。结果样品中检出L.monocytogenes 22株,检出率为2.9%(22/753)。污染最严重的是冷冻鱼糜制品9.4%(12/128),其次为预制半成品3.6%(8/221)和熟肉制品1.0%(2/196)。结论辽宁省市售食品存在不同程度L.monocytogenes污染,尤以冷冻鱼糜制品污染较为突出,应继续加强对市售食品L.monocytogenes的检测及监管能力。Objective To analyze Listeria monocytogenes contamination in foods in Liaoning province in 2019,and preliminarily identify the types of high-risk food easily contaminated by the pathogen,so to provide references for food risk monitoring.Methods A total of 753 samples of different kinds of food were collected from 13 monitoring sites in our province.The isolation and biochemical identification of L.monocytogenes strains were performed according to the National Food Safety Standard(GB4789.30-2016)food Microbiology Test for L.monocytogenes.Results 2.92%(22/753)of the samples were detected as L.monocytogenes positive.The positive rate of frozen minced fish products was the highest at 9.38%(12/128),followed by prefabricated semi-finished product 3.62%(8/221)and cooked meat product 1.02%(2/196).Conclusion L.monocytogenes contamination exists in commercial food in Liaoning province,especially in frozen surimi products.The detection and supervision of L.monocytogenes in commercial food should be further strengthened.
