摘　　要：近年来,人们对食品安全和卫生的关注度日渐增强,越来越多的食品生产厂家开始重视食品卫生。但食品的加工制作流程复杂,任何一个环节的卫生条件不达标,都会影响到最终的安全性。基于此,本文综述了食品卫生安全现状,分析了食品卫生检测方面存在的问题以及食品卫生检测技术研究进展及应用,旨在提高食品卫生水平,满足人们对食品安全的追求。In recent years,people pay more and more attention to food safety and hygiene.More and more food manufacturers begin to pay attention to food hygiene.But food processing process is complex,any health condition of a link is not up to standard,will affect the ultimate security,Based on this,this paper summarizes the current situation of food hygiene and safety,analyzes the problems existing in food hygiene testing and the research progress and application of food hygiene testing technology,aiming to improve the level of food hygiene and satisfy people's pursuit of food safety.
