摘 要:目的了解新疆市售油炸焙烤类制品中丙烯酰胺的含量及居民对此类食品的消费量水平,科学评估消费人群膳食丙烯酰胺健康风险,为开展食品安全相关知识的宣传普及,制定相关标准提供科学依据。方法采用随机抽样的方法采集市售油炸焙烤类制品样品,参照GB 5009.204-2014《食品安全国家标准食品中丙烯酰胺的测定》检测丙烯酰胺含量;通过多阶段分层随机抽样的方法在新疆七个地(州)开展居民膳食丙烯酰胺知晓率及膳食消费量调查,分析膳食丙烯酰胺暴露水平。结果膳食丙烯酰胺的平均暴露水平为0.45μg/(kg bw·d),53.6%的被调查者暴露水平高于第五次中国总膳食研究中的丙烯酰胺暴露水平0.32μg/(kg bw·d),45.83%的居民从未听说过丙烯酰胺,12.02%的居民知晓其危害。结论新疆居民膳食丙烯酰胺存在一定暴露风险,膳食丙烯酰胺的知晓率较低;应加强相关食品安全知识的宣传普及,同时膳食中丙烯酰胺对新疆居民的健康影响也应引起关注。Objective To understand the content of acrylamide in the fried and baked food sold in the market,and consumption level of these food in the residents of Xinjiang,scientifically evaluate the risk of acrylamide in food to the health of people,and provide scientific evidence for carring out the populization of the knowledge of food safety,and fomulating related standard.Methods The samples of fried and baked food in the markets were collected with randomly sampling method,and detected the content of acrylamide as the method of thd National Food Standard-determination of acrylamide in food(GB 5009.204-2014).The survey of awareness rate of diet acrylamide and the consumption level were carried out in the residents of seven prefectures in Xinjiang,with multi-stage random sampling method,and the exposure level of acrylamide in food was scientifically analyzed.Results The average exposure level of diet acrylamide was 0.45μg/(kg bw·d).The exposure level of the 53.6%of respondents was higher than 0.32μg/(kg bw·d)in the exposure level of acrylamide in the fifth national total diet study.There were 45.83%of residents never heard of acrylamide,and only 12.02%of residents knew the risk of acrylamide.Conclusions There is exposure risk of acrylamide in the diet of residents in Xinjiang.The awareness rate of diet acrylamide is law.The propganda of food safety knowledge should be strengthened,and the influnce of diet acrylamide on the health of residents should be paid attention to.
