摘  要:以桑叶、青钱柳为主要原料,通过醇提法、水提法提取得到浸膏,开发一款具有降糖功能的颗粒型固体饮料。采用单因素试验及正交试验获得最优工艺为主料和辅料总质量99.8%,罗汉果甜苷0.20%,其中主料(桑叶浸膏∶青钱柳叶浸膏=1∶3,质量比)∶辅料(麦芽糊精∶甘露醇=1∶12,质量比)=1∶6。根据此最优配方制成5 g/袋的颗粒型固体饮料,颗粒、色泽均一,以20倍温水冲服,甜度适中、风味独特。With mulberry leaves and Cyclocarya paliurus as main raw materials,the extract was obtained by alcohol extraction and water extraction,and a granular solid beverage with hypoglycemic function was developed.Single factor and optimum technological conditions were as follows:main materials and excipients accounted for 99.8%of the total,and Mogreside accounted for 0.20%,among which main materials(mulberry leaf extract∶Cyclocarya paliurus extract=1∶3,mass ratio)∶excipients(Maltodextrin∶Mannitol=1∶12,mass ratio)=1∶6.According to the optimal formula,5 g/bag of granular solid beverage with symmetrical particles and uniform color was prepared.After taking it with 20 times warm water,it had moderate sweetness and unique flavor.
