摘  要:本研究建立了乙醇溶剂萃取结合GC-MS直接进样检测酒醅中EC的测定方法。样品经60%乙醇溶液(V/V)萃取,3.0%(W/V)活性炭净化处理,气相色谱-质谱联用检测酒醅中的EC。结果表明,在浓度为10~800μg/L的范围内线性良好(R2=1),检出限为2.8μg/kg,定量限为9.2μg/kg,加标回收率为88.53%~117.25%,相对标准偏差为1.74%~6.17%。该方法样品处理简便、成本低廉,方法可靠,满足酒醅中EC的检测需要。A method for the determination of ethyl carbamate(EC)in fermented grains was developed by combining ethanol solution extraction with gas chromatography-mass spectrometry(GC-MS)direct injection.The samples were extracted by 60%(v/v)ethanol solution,and purified by 3.0%(w/v)activated carbon.The results showed that,the method had good linear relationship in the concentration range of 10μg/L to 800μg/L(R2=1),the limit of detection was 2.8μg/kg,the limit of quantitation was 9.8μg/kg,the spiked recoveries were 88.53%to 117.25%,and the relative standard deviations were 1.74%to 6.17%.The method is cheap,simple,accurate and reliable,and can meet the requirements for the determination of EC in fermented grains.
