摘 要:本文比较了50 nm和100 nm孔径国产陶瓷膜对脱脂牛、羊乳中酪蛋白与乳清蛋白分离过程和膜性能参数的影响,通过测定不同阶段截留液与透过液pH、成分含量、色度变化、蛋白脱除率等指标对分离效果进行对比分析。结果表明:羊乳在孔径50 nm的陶瓷膜中膜通量为96.89 kg/(m^(2)·h)显著高于100 nm陶瓷膜的膜通量90.58 kg/(m^(2)·h)(P<0.05),且透过液中几乎不含酪蛋白。50 nm陶瓷膜对脱脂牛乳和脱脂羊乳的乳清蛋白总脱除率均达到96%以上,钙脱除率均达到31%以上,磷脱除率均达到55%以上。与100 nm陶瓷膜相比,50 nm陶瓷膜能更有效分离牛乳和羊乳中的乳清蛋白和酪蛋白。The objective of this study was to compare the effects of 50 nm and 100 nm pore size ceramic membranes on the separation process and membrane performance parameters in skim cow milk and goat milk.The pH,component content,color changes,protein removal rate of retentates and permeates at different stages were measured.The results showed that the flux of 50 nm ceramic membrane was 96.89 kg/(m^(2)·h),which was significantly higher than that of 100 nm ceramic membrane 90.58 kg/(m^(2)·h)(P<0.05).The total whey protein removal rate of skim cow milk and skim goat milk by 50 nm ceramic membrane was more than 96%,the calcium removal rate was more than 31%,and the phosphorus removal rate was more than 55%.Compared with 100 nm ceramic membrane,50 nm ceramic membrane would be more effectively separate whey protein and casein in cow milk and goat milk.
