摘 要:为进一步开发利用废蜜资源,为其综合利用提供依据,该试验以废蜜为原料采用普通法制备焦糖色素,并对制备的焦糖色素的特性进行了研究。结果表明,在糖蜜pH为5,反应温度为110℃,反应时间为4 h时,制备的焦糖色素色率达20263 EBC,同时红色指数为5.93,黄色指数为9.11,且制备的焦糖色素中没有颗粒沉淀物;通过对制备的焦糖色素的特性研究发现,沸水浴处理可降低焦糖体系的pH值,提高焦糖体系的色率并促使焦糖色素趋于稳定,样品浓度对焦糖色素的存储稳定性存在明显影响,焦糖色素在偏酸性环境中更稳定,柠檬酸钠及磷酸二氢钠对焦糖色素的影响较大,而无水亚硫酸钠对焦糖色素的影响较小,当焦糖色素浓度为1.2 mg/mL时,DPPH·清除率超过83%,表现出较好的抗氧化活性,通过粒径分析发现该焦糖色素粒径分布较广,主要集中在0.1~3.162μm范围内,占总量的67%以上,热处理增大了焦糖色素粒径分布范围。In order to further develop and utilize the waste molasses resource and provide basis for its comprehensive utilization,with waste molasses as the raw materials,caramel pigment is prepared by common method,and the characteristics of prepared caramel pigment are studied.The results show that when the pH of molasses is 5,the reaction temperature is 110℃,and the reaction time is 4 h,the color ratio of prepared caramel pigment reaches 20263 EBC,the red index is 5.93 and the yellow index is 9.11,and there's no particle precipitate in the prepared caramel pigment.Through the study on the characteristics of prepared caramel pigment,it is found that the boiling water bath treatment can reduce the pH value of caramel pigment,improve the color ratio of caramel pigment system and promote the stability of caramel pigment.The sample concentration has a significant effect on the storage stability of the caramel pigment,and the caramel pigment is more stable in a slightly acidic environment.Sodium citrate and sodium dihydrogen phosphate have greater influence on caramel pigment,while anhydrous sodium sulfite has less influence on caramel pigment.When the concentration of caramel pigment is 1.2 mg/mL,the DPPH·scavenging rate is over 83%,showing good antioxidant activity.Through particle size analysis,it is found that the caramel pigment has a wide particle size distribution,mainly concentrating in the range of 0.1~3.162μm,accounting for more than 67%of the total amount.The particle size distribution range of caramel pigment is widened by heat treatment.
