摘  要:谷氨酸发酵是利用玉米淀粉糖作为底物碳源,通常采用湿法工艺生产玉米淀粉糖。湿法工艺生产投资规模大,设备腐蚀快,能耗高,污染环境。为了有效改进淀粉加工和制糖工艺,笔者采用半干法工艺生产玉米粉糖,气浮分离提取玉米粉中的蛋白质。在制备玉米粉糖的过程中,当组合添加量分别为普鲁兰酶0.15‰和木瓜蛋白酶0.08‰时,可以降低糖液黏度,提高过滤速度,使玉米粉糖的葡萄糖质量浓度提高5.3 g/dL、透光率提高20%;增加氨基酸的质量分数,糖液中的氨基酸可以使谷氨酸发酵产酸率提高0.5 g/dL、糖酸转化率提高0.9%;利用玉米粉糖生产谷氨酸,能够简化生产流程,降低生产成本。Glutamic fermentation uses corn starch sugar as substrate carbon source,corn starch sugar is usually produced by wet process.Wet process production investment scale,equipment corrosion fast,high energy consumption,environmental pollution.Wet process production investment scale,equipment corrosion fast,high energy consumption,environmental pollution.In order to improve starch processing and sugar production technology efficiency,a semi-dry process was used to produce corn flour sugar and to separate and extract protein from corn flour by air flotation.In the process of preparing corn flour sugar,the combined addition of pullulanase 0.15‰and papain 0.08‰can reduce the viscosity of sugar solution and improve the filtration speed.The glucose mass concentration of corn flour sugar increased by 5.3 g/dL and the light transmittance increased by 20%.By increasing the mass fraction of amino acids,the amino acids in the sugar solution can increase the glutamic acid fermentation acid production rate by 0.5 g/dL and the sugar-acid conversion rate by 0.9%.The production of glutamate with corn flour sugar can simplify the production process and reduce the production cost.
