孕妇营养包充氮工艺对货架期内营养素的稳定性影响研究

摘  要:比较充氮气调工艺对孕妇营养包货架期内营养素的稳定性影响,旨在探讨营养素最适合的气体充调工艺,为营养包类产品的包装保存提供支持。结果表明,随贮存时间的延长,营养素均出现了不同程度的衰减,不充氮气工艺组营养素的衰减率均高于充氮气工艺组。高温及加速贮存条件下,维生素C的衰减率最高,不充氮气工艺组中维生素C的衰减率分别为27.45%和30.53%。高湿及强光贮存条件下,不充氮气工艺组中维生素A的衰减率最高,分别为7.92%和16.21%。通过分析不同气体充调工艺对孕妇营养包中营养素的衰减变化,为孕妇营养包充氮工艺提供重要的理论依据。It is carried out to compare the effects of nitrogen filling process on the stability of nutrients during the shelf life of pregnant women’s nutrition packs,in order to explore the most suitable gas filling process for nutrients,to provide support for the packaging and preservation of nutrition pack products.The results showed that with the prolongation of storage time,the nutrient attenuation occurred to different degrees,and the nutrient attenuation rate of the non-nitrogen-filled process group was higher than that of the nitrogen-filled process group.Under high temperature and accelerated storage conditions,the attenuation rate of vitamin C was the highest,and the attenuation rate of vitamin C in the process group without nitrogen gas was 27.45%and 30.53%,respectively.Under high humidity and strong light storage conditions,the attenuation rate of vitamin A in the process group without nitrogen gas was the highest,and the results were 7.92%and 16.21%,respectively.By analyzing the attenuation changes of nutrients in pregnant women’s nutrition packs with different gas filling and adjusting processes,it provides an important theoretical basis for the nitrogen filling process of pregnant women’s nutrition packs.
