摘  要:通过分离等步骤探索海南澄迈县桥头镇地瓜硒多糖结构特征。以桥头地瓜为原料进行硒多糖提取,以蛋白托出率为考察指标进行脱蛋白工艺优化。实验表明,蛋白脱出率达89.71%,硒含量为1.5μg/g。对硒多糖进行纯化,采用红外光谱等手段对组分分析,包括理化性质、糖苷键类型等,结果表明,纯化后硒多糖为不定型状态,以条状等不规则形式存在。The structural characteristics of selenium polysaccharide of sweet potato in Qiaotou Town,Chengmai County,Hainan Province were explored through separation and other steps.The selenium polysaccharide was extracted from Qiaotou sweet potato,and the deproteinization process was optimized with protein elution rate as the investigative index.The results show that the protein removal rate is 89.71%and the selenium content is 1.5μg/g.The selenium polysaccharide is purified and the components are analyzed by infrared spectroscopy,including physical and chemical properties,glycosidic bond types and so on.We also find that the purified selenium polysaccharide is in an amorphous state and exists as irregular form such as strips.
