摘 要:以红花椒对椒麻糊中挥发性物质的影响为研究对象,实验采用GC-MS分析红花椒、油淋葱、椒麻糊的挥发性物质。实验结果显示:红花椒、油淋葱和椒麻糊中分别检测到54,68,63种挥发性物质,占相对含量的91.421%、81.063%、92.077%;分别检测到烯烃类物质28,22,20种,占相对含量的66.583%、40.389%、64.333%;分别检测到醇类物质7,10,12种,占相对含量的4.812%、15.493%、18.120%。烯烃类物质、醇类物质是椒麻糊的主要挥发性物质。维恩图分析表明,红花椒可能为椒麻糊贡献了23种挥发性物质,其中α-侧柏烯、γ-松油烯、2-蒎烯、β-蒎烯、3-蒈烯、罗勒烯、假性柠檬烯、萜品油烯、柠檬烯、β-榄香烯、邻伞花烃、α-水芹烯、香茅醛、醋酸辛酯、4-侧柏醇、芳樟醇、α-松油醇、β-松油醇、胡椒酮、4-异丙基-2-环己基烯酮既可能来源于红花椒也可能来源于油淋葱,可以确定的是松油烯、(E,E)-2,4-己二烯醛、4-异丙基甲苯来源于红花椒的可能性极大。研究结果表明,红花椒贡献给椒麻糊的挥发性物质以烯烃类、醇类为主,酮类、醛类有一定贡献。With the effect of Zanthoxylum bungeanum on volatile substances in Jiaoma paste as the research object,the volatile substances of Zanthoxylum bungeanum,fried scallion and Jiaoma paste are analyzed by GC-MS.The experiment results show that 54,68,63 kinds of volatile substances are detected in Zanthoxylum bungeanum,fried scallion and Jiaoma paste respectively,accounting for 91.421%,81.063%and 92.077%of the relative content respectively;28,22,20 kinds of alkenes are detected,accounting for 66.583%,40.389%and 64.333%of the relative content respectively;7,10,12 kinds of alcohols are detected,accounting for 4.812%,15.493%and 18.120%of the relative content respectively.Alkenes and alcohols are the main volatile compounds in Jiaoma paste.Vien diagram analysis shows that Zanthoxylum bungeanum may contribute 23 kinds of volatile substances to Jiaoma paste,among which,α-thuiene,γ-terpinene,2-pinene,β-pinene,3-carene,ocimene,pseudolimonene,terpinnoene,limonene,β-elemene,o-cymene,α-phelandrene,citronellal,octyl acetate,4-thujyl alcohol,linalool,α-terpineol,β-terpineol,piperitone and 4-isopropyl-2-cyclohexenone may be derived from Zanthoxylum bungeanum or fried scallion,it could be confirmed that terpinolene,(E,E)-2,4-hexadienal and 4-isopropyl toluene are very likely to come from Zanthoxylum bungeanum.The research results show that alkenes and alcohols are the main volatile substances that Zanthoxylum bungeanum contributes to Jiaoma paste,and ketones and aldehydes contribute to a certain extent.
