摘 要:采用不同冻结点的不冻液(冻结点分别为-39,-48,-57和-63℃)对白斑狗鱼进行冻结处理,通过测定相关指标及冷冻切片,研究不冻液冻结对白斑狗鱼冻融稳定性的影响。结果表明:不冻液冻结速率显著高于空气冻结;不冻液冻结组鱼块的冰晶体积明显小于空气冻结组鱼块,4号不冻液冻结组鱼块内冰晶体积最小且分布均匀;不冻液冻结处理可抑制反复冻融导致鱼块的色泽、汁液流失率发生的劣化,其中4号不冻液冻结鱼块色泽明亮,汁液流失率最低;随冻融次数的增加,蛋白质变性程度逐渐增强,经不冻液冻结后鱼块变性程度减弱,4号不冻液冻结组鱼块总巯基含量最高,3号和4号不冻液冻结组鱼块表面疏水性显著低于其他处理组。相比于空气冻结,不冻液冻结更有利于白斑狗鱼的贮藏,4号不冻液冻结鱼块冻结速率快、冰晶体积小、冻融稳定性好。Unfrozen liquid with different freezing points was used(the freezing points were-39,-48,-57 and-63℃,respectively).The effect of unfrozen liquid freezing on the freezing and thawing stability of Esox lucius was studied by measuring frozen sections and related indexes.The results showed that the freezing rate of unfrozen liquid was significantly higher than that of air freezing;The ice crystal volume of fish block in unfrozen liquid freezing group was significantly smaller than that in air freezing group and No.4 unfrozen liquid freezing group;The ice crystal volume in the fish block was the smallest and evenly distributed;Unfrozen liquid freezing treatment could inhibit the deterioration of color and thawing loss rate of fish blocks caused by repeated freezing and thawing;Among them,No.4 unfrozen liquid frozen fish blocks had bright color and the lowest thawing loss rate;With the increase of freezing and thawing times,the degree of protein denaturation gradually increased,and the denaturation degree of fish blocks decreased after freezing with unfrozen solution;The total sulfhydryl content of fish blocks in No.4 unfrozen solution freezing group was the highest,and the surface hydrophobicity of fish blocks in No.3 and No.4 unfrozen solution freezing group was significantly lower than that in other treatment groups.Compared with air freezing,unfrozen liquid freezing was more conducive to the storage of Esox lucius.The No.4 unfrozen liquid frozen fish block had fast freezing rate,small ice crystal volume and good freeze-thaw stability.
