基 金:苏州工业园区集体用餐配送单位食品安全现状及智慧厨房运用分析(H211357)。
摘 要:目的:了解苏州工业园区集体用餐配送单位的食品安全状况,并评价智慧厨房的应用效果。方法:对苏州工业园区在营的37家集体用餐配送单位进行全面的食品安全现况调查,并根据是否安装智慧厨房进行对比分析。结果:37家集体用餐配送单位平均占地2802.49 m~2,共承包了26所学校和617家企业的用餐,平均每家单位每天送餐5368份。7家安装智慧厨房的单位在抽检合格率(94.4%)、食品安全知识答题准确率(95.2%)以及量化评级(评A率100%)等方面均优于平均水平。结论:苏州工业园区集体用餐配送单位的布局合理,经营与食品安全总体情况良好。安装使用智慧厨房有利于企业实现规范与标准化,全面提升食品安全。Objective:To understand the food safety situation of group meal distribution enterprises in Suzhou Industrial Park(SIP)and evaluate the application effect of the smart kitchen.Method:The author conducted a comprehensive survey on the food safety of 37 group meal distribution enterprises in SIP,and performed comparative analyses by the installment of the smart kitchen.Result:The 37 enterprises occupy an average area of 2802.49 m~2 and service for 26 schools and 617 enterprises.Each enterprise delivers an average of 5368 meals per day.The 7 enterprises with smart kitchens outperformed the average in terms of spot-check quality rate(94.4%),accuracy rate of answering the questions of food safety knowledge(95.2%),and quantitative scoring(A-rate 100%).Conclusion:The group meal distribution enterprises in SIP have a reasonable layout,good operation and food safety situation.The application of smart kitchens could help to achieve standardization and improve food safety in general.
