摘  要:乙基麦芽酚是一种常见的食品添加剂,具有增香作用,在肉制品、饼干、饮料中应用广泛,但一些生产厂家为了达到以次充好的目的在食用油中加入乙基麦芽酚这种香料。结合河南省食用油不合格的通报数据及日常监测数据来看,食用植物油中乙基麦芽酚的违法添加问题较严重,尤其是芝麻油,严重误导消费者并损害消费者的利益,给我国食用植物油市场造成恶劣影响。而现有的食用植物油中乙基麦芽酚的检测方法存在一定不足,具体表现为检测方法单一、对仪器要求高、对干扰物质难以排除。本文就食用植物油中乙基麦芽酚的违法添加问题及检测方法进行探讨,并对相关问题提出意见,以期为食用植物油的监管提供参考,改善食用植物油的市场环境。Ethyl maltol is a popular food additive that is widely used in meat products,biscuits and beverages.It can achieve flavor enhancement.However,some manufacturers add ethyl maltol to edible oil in order to pass off inferior products.Combined with the reported data of unqualified edible oils in Henan province and daily monitoring data,the illegal addition of ethyl maltol in edible vegetable oils,especially sesame oil,is particularly serious,which seriously misleads consumers and harms their interests,and has a bad impact on the edible vegetable oil market.However,the existing detection methods for ethyl maltol in edible vegetable oils have certain shortcomings,which are specifically manifested in the single detection method,high requirements for instruments,and difficulty in eliminating interfering substances.This article discusses the illegal addition and detection method of ethyl maltol in edible vegetable oil,and puts forward opinions on related issues,hoping to provide a reference for the supervision of edible vegetable oil and improve the edible vegetable oil market environment.
