摘  要:[目的]采用葛根、枳椇子、红茶和罗汉果进行解酒袋泡茶产品的配方优化,并探讨其解酒功效。[方法]应用D-最优混料设计法研究解酒茶的最优配方,建立各原料配比与解酒活性物质总黄酮含量及感官审评分数的回归方程,并建立小鼠急性酒精中毒模型,观察小鼠醉酒行为学指标,采集小鼠血液检测乙醇含量,采集小鼠肝脏检测乙醇脱氢酶(ADH)、乙醛脱氢酶(ALDH)水平。[结果]配方优化获得解酒茶各原料最优添加比例为红茶50.0%、葛根41.7%、枳椇子8.3%、罗汉果0%。该配方袋泡茶各项指标为总黄酮含量26.12 mg/g,感官评分88.10分,口感甘醇,富含解酒活性成分。功效试验结果表明,解酒茶各剂量组平均延长醉酒潜伏期24.44 min,缩短醉酒维持时间205.18 min,明显改善醉酒小鼠的行为学指标。同时,低、中、高剂量组显著降低小鼠饮酒后1、2 h的血乙醇浓度(P<0.05);且中剂量组小鼠血乙醇浓度在3 h后依旧显著低于模型组(P<0.01)。此外,高剂量组显著提高了肝脏ALDH的活性(P<0.01)。[结论]解酒茶香气怡人,滋味醇和,且具有良好的解酒、醒酒功效,能满足大健康时代“绿色、天然、健康、便捷”的日常解酒需求。[Objective]To optimize the formula of anti-alcoholism teabag products with Radix Puerariae,Semen Hoveniae,black tea and Siraitia grosvenorii,and to explore their anti-alcoholism effects.[Method]The D-optimal mixture design method was used to study the optimal formula of anti-alcoholism tea,and establish a regression equation of the ratio of each raw material,the content of total flavonoids and the sensory evaluation score of active substances for relieving alcoholism.The acute alcoholism model was established by alcohol gavage,and the behavior indexes of drunkenness in mice were observed.The blood of mice was collected to detect the alcohol content,and the liver of mice was collected to detect the levels of ADH and ALDH.[Result]The optimal addition ratio of each raw material of anti-alcoholism tea was obtained by optimizing the formula:black tea 50.0%,Radix Puerariae 41.7%,Semen Hoveniae 8.3% and Siraitia grosvenorii 0%.The index value of the teabag obtained under this formula was that the content of total flavonoids was 26.12 mg/g,the sensory score was 88.10 points,the taste was sweet and mellow,and it was rich in anti-alcoholism active ingredients.The results of the efficacy test showed that each dose group of anti-alcoholism tea prolonged the incubation period of intoxication by 24.44 minutes,shortened the maintenance time of intoxication by 205.18 minutes,and significantly improved the behavioral indicators of intoxicated mice.At the same time,the low,medium and high dose groups significantly reduced the serum ethanol concentration of mice at 1 h and 2 h after drinking(P<0.05).Moreover,the serum ethanol concentration in the middle dose group was still significantly lower than that in the model group after 3 hours(P<0.01).In addition,the activity of ALDH in liver was significantly increased in the high dose group(P<0.01).[Conclusion]Anti-alcoholism tea has pleasant aroma,mellow taste,and good anti-hangover and sobering effects,which can meet the daily anti-hangover needs of the public seeking"green,natural,hea
