摘  要:姜黄素由于其优异的生理活性功能被广泛应用于食品、化妆品和医药等领域,但其水溶性差、生物利用率低等缺点严重限制了其应用。因此,本研究从常见的花生乳中分离得到粗、精油体、全脂乳和脱脂乳,采用pH驱动法将姜黄素载入到油体及其副产品中,通过体外消化模型,研究其在胃肠道中的特性。结果表明,碱性PBS能够有效去除油体中的杂质(受污染的蛋白质等)。在消化过程中,负载姜黄素的油体及其副产物在胃部产生明显聚集,这归因于蛋白质的水解和酸性条件下姜黄素的析出结晶。纯化后的油体极大地提升了姜黄素的生物可接受率。本研究证明了这一新颖的方法可将姜黄素载入至天然油体之中并应用于食品行业,有助于更有效的营养保健品的设计和开发。Curcumin is widely used in food,cosmetics,medicine and other fields because of its excellent physiological activity,but its low water solubility and low bioavailability seriously limit its application.Therefore,in this study,crude oil body,refined oil body,whole milk and skimmed milk extracted and purified from common peanuts,then,curcumin was loaded into the oil body and its by-products by pH-driven method.And its characteristics in gastrointestinal tract were studied through in vitro digestion model.The results show that alkaline PBS can effectively remove impurities(contaminated protein,etc)in oil body.During digestion,the oil body and its by-products which loaded with curcumin gathered significantly in the stomach,it was attributed to the hydrolysis of protein and the precipitation and crystallization of curcumin under acidic conditions.And the purified oil body greatly improved the bioacceptability of curcumin.This study confirmed that this novel method can load curcumin into natural oil body and apply it to the food industry,which is helpful to the design and development of more effective nutritional and health products.
