摘  要:对比研究阴离子银耳多糖(tremella fuciformis polysaccharides,TFP)与阳离子壳寡糖(chitooligosaccharide,COS)静电与非静电相互作用对抗氧化效果的影响。在不同溶液pH的条件下,制备银耳多糖-壳寡糖静电与非静电复合物,通过红外光谱与X射线衍射图谱研究TFP-COS静电与非静电复合物的基团组成与结构区别,进一步比较复合物对OH、DPPH、ABTS自由基的清除作用,研究静电与非静电相互作用对其抗氧化性能的影响。结果表明,不同pH条件下,TFP与COS可通过静电与非静电相互作用形成基团组成与晶体结构不同的复合物。对抗氧化性进行分析可以得到,在TFP-COS非静电复合物浓度范围为2~20mg/mL时,OH自由基清除率由14.24升高为32.04;DPPH自由基的清除率由39.63升高为60.99;ABTS自由基的清除率由15.48升高为22.84。同时,此浓度范围内,TFP-COS非静电复合物对OH、DPPH、ABTS自由基清除率均高于TFP、COS以及TFP-COS静电复合物。本研究可为天然抗氧化剂的开发以及TFP与COS相互作用的应用研究提供参考。The effects of electrostatic and non-electrostatic interaction between anionic tremella fuciformis polysaccharides(TFP)and cationic chitosan oligosaccharide(COS)on anti-oxidation were studied.Tremella fuciformis and chitosan oligosaccharide complex was prepared under different pH conditions.The group composition and structure changes of TFP-COS electrostatic and non-electrostatic complex was studied by infrared spectrum and X-ray diffraction pattern.The effect of electrostatic and non-electrostatic interaction on oxidation resistance was systematically studied by comparing scavenging effects of the complex on OH,DPPH and ABTS free radicals.The results showed that TFP and COS could be combined by electrostatic and non-electrostatic.The complex had different composition and crystal structure under different pH conditions.The analysis of oxidation resistance showed that when TFP-COS non-static complex concentration was from 2 to 20mg/mL,the scavenging rate of OH radical increased from 14.24 to 32.04,the scavenging rate of DPPH radical increased from 39.63 to 60.99 and the scavenging rate of ABTS radical increased from 15.48 to 22.84.At the same time,the scavenging rates of OH,DPPH and ABTS free radicals of TFP-COS non-electrostatic complexes were higher than those of TFP,COS and TFP-COS electrostatic complexes.This study provides reference for the development of natural antioxidants and the utilization of TFP and COS interaction.
