摘  要:目的了解嘉兴市2021年食品中食源性致病菌的污染现状,为食品安全风险评估和预防食源性疾病提供科学依据。方法对嘉兴市5类食品共计464份样品按照《2021年浙江省食品微生物及其致病因子监测方案》以及GB 4789国家食品标准的检验要求,进行致病菌(单核细胞增生李斯特菌、副溶血性弧菌、小肠结肠炎耶尔森菌、金黄色葡萄球菌、蜡样芽胞杆菌、沙门菌、致泻性大肠埃希菌)检测。结果464份食品样品中共检测出致病菌68株,总检出率为14.66%。副溶血性弧菌检出率最高(10.91%);5类食品中肉与肉制品污染最严重(21.93%),其次是水产品(21.88%)。不同采样点及不同采样时间采集样品食源性致病菌检出率差异均无统计学意义(P>0.05)。结论嘉兴市食品中存在一定的食源性致病菌污染,且存在不同变化趋势。需进一步加强监管,切实保障本市食品安全。Objective To investigate the contamination of food-borne pathogen in Jiaxing City in 2021,so as to provide scientific basis for food safety risk assessment and prevention and control of food-borne disease.Methods According to the Monitoring Plan for Food Microorganisms and Their Pathogenic Factors In Zhejiang Province in 2021 and the inspection requirements of GB 4789 national food standard,464 food samples in 5 categories were conducted for the detection of pathogenic and bacteria in Jiaxing City,including Listeria monocytogenes,Vibrio parahaemolyticus,Yersinia enterocolitica,Staphylococcus aureus,Bacillus cereus,Salmonella and diarrhea Escherichia coli.Results In 464 food samples,68 strains of pathogenic bacteria were detected,with the total detection rate was 14.66%.The detection rate of Vibrio parahaemolyticus was the highest(10.91%);among the five kinds of food,meat and meat products were the most polluted(21.93%),followed by aquatic products(21.88%).There was no statistical significance on the difference in the detection rate of food-borne pathogens among samples collected at different sampling points and at different sampling times(P>0.05).Conclusion There is a certain contamination of food-borne pathogens in food in Jiaxing City,and there are different trends.It is necessary to further strengthen supervision and effectively ensure food safety in this city.
